How to make it:

1. Muddle the Raspberries: Start by adding 5 fresh raspberries to your shaker and muddle them until they’re completely crushed.

2. Add the Egg White: Pour in half an egg white. If you’re after a super frothy top, use the white from a whole egg.

3. Measure and Mix: Using a jigger, add 45 ml of gin, 20 ml of freshly squeezed lemon juice, and 5-10 ml of simple syrup to the shaker.

4. Shake and Taste: Give everything a strong shake. Then, take a small taste to ensure the flavors are spot on.

5. Shake Again with Ice: Add some ice cubes to the shaker and shake once more to chill the cocktail.

6. Strain and Serve: Double strain the cocktail into a chic martini glass, making sure no ice gets through.
